Greetings Jason Worth-a-Ham, I am definitely an idiot responding to a piece of you-know-what like yourself, but let me be consistent and ask you an idiotic question: Do you have anything to disprove the facts that are given in my response to the genius who posted the Canola Oil crap? If not… beat it…Ham! @#! (or if you prefer – Canola yourself…) Dre (For you, still Dr.Dre)

I was speaking of the oils which he recommends for frying. It goes butter, tropical fats, high oleic oils … canola oil, and olive oil in that order of preference.  He says to fry with the ones that contain the least amount of EFAs and the greatest amount of SaFAs and MUFAs.  Canola has the most amount of PUFAs in the list, yet is rated higher than olive oil.  There must be some components to olive oil that increase its damage from heat since it is indeed much lower in EFAs.  I have not figured it out. turf

Actually, you meant to write that it is low in PUFAs, but high in EFAs, which is unusual.  And so it is.  There’s a lot of alpha linolenic acid (ALA) in Canola, but not much of any other PUFA.  The ALA, of course, makes it go rancid a bit faster, and it also is responsible for all those "linseed oil drying" type free radical volitiles that are carcinogenic and nastily reactive when ALA-containing oils are heated (or allowed to oxidize, as in oil-based paint drying).  I wouldn’t cook with Canola, but when fresh it seems safe enough to eat in salads, and the ALA should be good for you.  Rats don’t tolerate erucic acid very well, but that’s just one more reason that rat studies don’t always tell what’s good for people.  Colza (rape oil with a lot higher erucic content) is indeed used for cooking in Europe and China, without toxicity (except when contaminated, as in a famous Spanish incident with adulterated rapeseed oil in 1980).  It’s rather ironic that somebody should mention Canola as possible cause of ALD; erucic acid (for anyone who saw the movie Lorenzo’s Oil) is used to TREAT ALD. It’s one of the few things that has any effect at all.                                        Steve Harris, M.D.

I’m sorry, you can’t get off that easily. Your posting it, with no comment indicating your opinion of it, can only be taken to mean you thought it had some validity. Why else would you bother to post it — because you thought it was a bunch of crap? This is like the kid that, when corrected in a mistake, says, "Oh yeah, that’s actually what I meant."
